Jacob Craig returned to Saint Francis football in February 2024 as the defensive coordinator, having previously served as a defensive line and outside linebackers coach from 2017 to 2019. Before rejoining Saint Francis, Craig spent two seasons at California University of Pennsylvania as the special teams coordinator and defensive line coach. During his tenure at Cal, the team performed well, achieving a 13-8 overall record and excelling in areas like run defense, ranking second in Division II in 2022. Craig also coached several players to All-PSAC selections and helped the team rank highly in total sacks nationally.

In 2021, Craig had a brief stint at Saint Vincent as the defensive coordinator, where he led the Bearcats' defense to impressive national rankings in various defensive categories. He then returned to Saint Francis in 2022, contributing to the team's defensive success and mentoring players who received conference honors. Craig's collegiate playing background, starting as a walk-on at Pitt and later playing at Clarion University, adds depth to his coaching approach, complementing his academic achievements in secondary education and athletic coaching.
