From 2014 to 2023, Steve Gruber coached the football team at Pace University. He played a crucial role in the team's success, including a notable 7-3 season in 2018, their first winning season since 1999. In his first year as defensive leader, Pace's defense ranked second in the Northeast-10 Conference in run defense, led in sacks, and placed third in interceptions. Gruber also had a positive impact on player development, with five defensive starters receiving NE10 All-Conference honors.

Before coaching at Pace, Gruber worked at local high schools as an assistant coach, including Westlake High School in 2013 and John Jay Cross River High School in 2012. He graduated from SUNY Cortland in 2012 with a bachelor's degree in physical education, where he excelled as a defensive lineman and was named to the New Jersey Athletic Conference Second Team during his senior year.

Gruber's dedication to coaching and player development is evident throughout his career, from his playing days at Cortland to his coaching stints at Pace and local high schools. His strategic leadership and ability to nurture talent have earned him respect in the coaching community and have left a lasting impact on the football programs he has been a part of.
