Balance and control are crucial when blocking. In particular for the recovery. If the catcher is not balanced it is going to take them a significant more amount of time to get back to their feet and retrieve the ball.
A great way to check for the catchers body control, balance and ball control is a Short Toss Block & Balance Drill. You can advance this drill by backing up and throwing more of a game like pitch.
